Description
The carob tree is an evergreen native to the Mediterranean and can be found growing in Asia. Classified as a legume, the carob tree belongs to the pea family (Fabaceae) and produces carob pods, these pods are known as the fruit of the tree. Only when the pods change from green to brown are they then harvested. Within each pod, there are up to fifteen carob seeds.
Nicknamed St John’s bread or locust bean, carob powder is sometimes used as an alternative to cocoa powder for its naturally sweet taste.
